Recipe 9: Mediterranean tilapia casserole

As this is a Mediterranean dish, and in the Mediterranean family is key, this dish serves 8 people. It is a wonderful dish to use if you have got 8 hungry mouths to feed, as it is beautifully rich in color and texture, and easily made and served with rice. Alternatively adjust the ingredient quantities to suit.

(Preparation time approx 30 minutes, cooking time approx 20 minutes)

Ingredients

* 8 tilapia fillets
* 5 tablespoons olive oil
* 6 cloves of garlic, chopped
* 4 onions, chopped
* 2 lb fresh ripe tomatoes, skins removed and chopped
* 2 tablespoons of sun dried tomato paste
* 2 small glasses of white wine
* 20 black olives, halved and stones removed
* Freshly ground sea salt and pepper to season
* Bunch of chopped fresh parsley

Method

* Pre heat the oven to 350F (180c) and lightly grease a large oven proof dish.
* Dry the fillets on a piece of kitchen paper, and place into the dish, set aside.
* Heat the oil in a pan, and fry the garlic, onion and 3/4 of the parsley over a low heat for 5 minutes.
* Add the tomatoes, tomato paste, and wine. Stir, then season with salt and pepper to taste.
* Gently simmer for approximately 20 minutes.
* Add the olives to the sauce, then pour over the fillets, coating each one well.
* Bake in the oven for approximately 20 minutes, or until the fish is cooked.
* Serve on a bed of rice, and a sprinkling of parsley.

Recipe 8 – Tilapia fish soup

(Preparation and cooking time 45 minutes, approx)

Ingredients

* 1 pint of fish stock
* 3 tablespoons of white wine
* 2 onions, 1 red, 1 green, sliced
* 4 crushed cloves of garlic
* 1 leek, sliced
* 1 stick of celery, sliced into chunks
* 1 lb fresh tomatoes, skins removed and chopped into chunks
* 1 red pepper, de-seeded, and chopped
* 1 tablespoon sun dried tomato paste
* 2 tablespoons olive oil
* Squeeze lemon juice, and grated zest of 1/2 lemon
* 1 teaspoon fresh thyme, finely chopped
* 1 finely shredded bay leaf
* 1 tablespoon chopped fresh dill
* 4 tablespoons chopped fresh parsley
* 1 lb Tilapia, cut into chunks
* Freshly ground salt and black pepper to season
* Pinch of sugar to taste

Serves 4

Method

* In a pan heat up the oil, and cook the garlic, onion, and leek over a medium heat until soft, approximately 5-8 minutes.
* Add the fish stock, wine, celery, red pepper, tomatoes, tomato paste, lemon juice and zest, stir.
* Bring to the boil then reduce the heat and simmer for 12 minutes, or until the vegetables are nearly soft.
* Add the fish, thyme, dill, and bay leaf, and gently simmer for for a further 3-5 minutes, until the fish is cooked through.
* Season with salt and pepper, and sugar to taste and add 3 tablespoons of parsley.
* Serve with a warm crusty roll, and a sprinkle of parsley.

Recipe 7: Tilapia fish pie

This is a great hearty, wholesome, healthy recipe. Perfect to come home to on a dark Winters evening, served with seasonal vegetables. This dish is equally perfect on a Summers evening served with a crisp salad.

(Preparation time 10 minutes, cooking time approx 1 hour 10 minutes)

Ingredients

For the fish base:

* 1 lb of Tilapia fillets
* 1 cup of cooked prawns

For the sauce

* 3/4 pint of warm milk
* 3 tablespoons of flour
* 3 tablespoons of butter
* Squeeze of lemon juice
* freshly ground black pepper to season
* 1 tablespoon chopped fresh parsley

For the topping

* 1 1/2 lb potatoes
* 2 tablespoons of butter
* Dash of milk
* Freshly ground salt and black pepper to taste
* Cheese of your choice to top. (optional)

Serves 4

Method

* Pre heat the oven to 390F (200c)
* Remove the skin from the fish, and dry on kitchen paper. Cut the fish into bite sized chunks.
* Grease a 2 litre shallow oven proof dish, and scatter the fish and prawns in an even layer on the bottom. Set aside
* Peel, quarter, and rinse the potatoes. Cook them in a pan of boiling water for approximately 20 minutes, or until cooked.
* Whilst the potatoes are simmering, melt the butter over a medium heat.
* Add the flour and cook for a minute, stirring constantly.
* Add the milk a little at a time ensuring that it has blended before adding more.
* Bring to the boil and simmer for 3 minutes.
* Add the parsley, lemon juice, and season with pepper.
* Pour the finished sauce over the fish in the dish.
* Pour away the potato water, and mash potatoes with the butter and milk, to form a smooth topping. Season to taste
* Smooth the potatoes over the fish base evenly, and sprinkle cheese on top if desired.
* Bake in the oven for approximately 45-50 minutes, until cooked through and golden brown on top.

Recipe 6: Baked Tilapia with Fresh Tomato Sauce.

This recipe is wonderful because it is so healthy and good for you, and has a stunning fresh flavor. You can literally feel the benefits of this dish as you devour it. You can also add extra ingredients to the tomato sauce to give it that little twist. I sometimes add red peppers, or if I am feeling spicy I add some fresh chili.

(Preparation time 30 minutes, including the making of the sauce, cooking time 20 minutes approx)

Ingredients

* 8 Fresh tomatoes, skins removed and cut into chunks. The riper the better. (a can of tomatoes can be used, but fresh is by far the best option)
* 2 cloves of crushed garlic
* 1 red onion, finely chopped
* 4 tablespoons of chopped fresh basil
* 1/2 teaspoon of sugar
* 2 tablespoons butter
* 2 Tablespoons of tomato puree
* 4 tilapia fillets

Serves 4

Method

* Pre heat the oven to 350F (180c)
* You will need to get the sauce started first of all. To remove the tomato skins easily, score a cross shape in the bottom of each tomato, and submerge in kettle boiled water for 1 minute. Drain and rinse with cold water, the skins should peel off easily.
* Once the skins are removed chop the tomatoes into chunks.
* Melt the butter in a pan over a medium heat.
* Add the onion and garlic, stirring until soft.
* Add the tomatoes, puree and sugar. Simmer gently for approximately 15 minutes, until the liquid has reduced, stirring occasionally.
* Whilst the sauce is reducing, lightly grease an oven proof dish and place the fillets in the oven to bake for approximately 15-20 minutes, or until cooked through.
* Add the basil to the reducing sauce.
* Once the fish is cooked, remove from the oven and serve with a topping of the fresh tomato sauce.

Recipe 5: Oven Steamed Tilapia with a Lemon Twist

This is a really simple recipe, and can be used with many types of fish. It allows the delicate flavor of the fish to come through, without overpowering it with lots of different ingredients.

(Preparation time – 5 Minutes, cooking time 20 minutes approx)

Ingredients

* 4 Tilapia fillets, prepared, cleaned and dried
* Juice of 1 lemon
* Freshly ground salt and black pepper
* 4 teaspoons of butter

Serves 4

Method

* Lightly grease 4 sheets of foil (the idea is to form a loose parcel around the fish).
* Place each piece of fish into the center of its foil, season well with salt and pepper, a squeeze of lemon juice and a teaspoon of butter.
* Bring the foil up to form a loose parcel, place each parcel onto a baking tray, and bake in the center of the oven for approximately 15 – 20 minutes, or until cooked through (depending on the size of the fillet)
* This dish is beautiful served with parsley butter new potatoes, and fresh green beans.

Recipe 4 – Crumbed Tilapia

The best thing about any crumbed recipe is that its perfect for getting “little ones” eating fish. Not only is this a tasty recipe its another easy one to.

(Preparation time 10 minutes, cooking time 15 minutes approx)

Ingredients

* 4 tilapia fillets
* 1 egg, beaten
* Homemade wholemeal breadcrumbs (4 slices of bread, approx)
* 1/2 teaspoon paprika
* Freshly ground salt and black pepper
* 4 tablespoons vegetable oil
* 4 lemon wedges
* Mayonnaise sprinkled with paprika

Serves 4

Method

* Pre heat the oven to 350F (180c), and lightly grease a oven proof dish.
* Dry the fillets on a piece of kitchen paper.
* Mix the breadcrumbs with the paprika. Season with salt and pepper.
* Dip the fish in the beaten egg, then coat well with the breadcrumb.
* Heat the oil in a pan to a high temperature, ans seal the crumbed fillets for a few seconds each side.
* Transfer to the oven proof dish, and bake for approximately 10-15 minutes, or until cooked through.
* Serve a wedge of lemon and mayonnaise.

Recipe – 3 Baked Tilapia with garlic and herb butter

This Tilapia Recipe is perfect for a meal on the run, its quick, its tasty and its easy.

(cooking time approx 15 minutes, preparation time 5 minutes)

Ingredients

* 4 cleaned and prepared tilapia fillets
* 3 tablespoons butter
* 3 crushed garlic cloves
* 1/2 teaspoon paprika
* 1/2 teaspoon dried parsley
* Freshly ground salt and black pepper to season
* 2 tablespoons fresh Parsley
* 4 lemon wedges

Serves 4

Method

* Pre heat the oven to 350F. (180c)
* Lightly grease and place the fish fillets into an oven proof dish, season with salt and pepper, set aside.
* In a pan, combine the butter, garlic, paprika and dried parsley. Place over a low heat, and allow to melt. Stir the mixture until it starts to bubble.
* Remove from heat, and with a basting brush coat the fillets with the melted mixture.
* Place in the pre heated oven for approximately 15 minutes, or until cooked through.
* Serve with a sprinkling of fresh parsley, and a wedge of lemon.

Recipe 2 – Grilled/Barbecued Tilapia

Now this Tialpia recipe is perfect for the summer on the bbq.

(preparation time 1 hour 10 minutes, cooking time 5 – 10 minutes approx)

Ingredients

* 4 tilapia fillets, (cleaned and prepared)
* 2 sweet red peppers
* 10 spring onions
* Juice of 1 lemon and 1 lime
* 300 g vegetable oil
* 2 tablespoon of vinegar
* Cayenne pepper to taste
* Salt and pepper to season

Serves 4

Method

* Place the fish into a dish, leave to one side.
* finely chop the onions and the peppers.
* Place all the ingredients into a mixing bowl, and stir thoroughly until combined.
* Pour the mixture evenly over the fish making sure that it is well coated. cover and chill for one hour, allowing to marinade.
* This dish is beautiful when cooked over hot coals, but grilling is a great alternative. Place fish under a medium grill for approximately 5 – 10 minutes, or until cooked through, turning once.
* Serve immediately.

Recipe 1 – Baked Tilapia In Parsley and White Wine

This is one my favorite Tilapia Recipes, its easy and quick to do and can provide a dinner party standard meal on an affordable budget.

(approx 30-35mins, cooking time)

Ingredients

* 4 Tilapia fillets
* 8 tablespoons of Fresh Parsley
* 6 finely sliced shallots
* 4 tablespoons of creme fraiche
* 2 generous glasses of medium white wine
* 2 teaspoon cornflour blended with 2 teaspoons of wine
* 2-4 cloves of fresh crushed garlic
* 1 oz butter
* salt and freshly ground black pepper

Serves: 4

Method

* Pre heat the oven to 350F (180c)
* Place the Tilapia in a lightly oiled oven proof dish.
* Pour the wine, garlic, shallots, and 6 tbsp of parsley evenly over the fish. Season to taste.
* Place the butter on the fish.
* Cover the dish with a lightly oiled piece of foil to seal in the fish.
* Bake the fish in the center of the oven for 30 – 35 minutes.
* Once cooked, remove the Tilapia to a serving dish and keep warm. Pour the juices into a pan and stir in the blended cornflour.* Simmer for 2 – 3 minutes, until thickened. Stir in the creme fraiche.
* Pour over the Tilapia, sprinkle over the remaining parsley and serve immediately.
